If you leave without waiting for the grace period the company can sue you for something going wrong as they are missing manpower, in reality they need to have someone else in case you are sick so basically nothing happens but generally it is considered a dick move and it is possible it will reflect poorly on you later on. 2 weeks are in Europe legally binding and not something you do out of politeless, vice versa is also true nobody cna come to you and fire you without giving you 2 weeks to find something better. In most white collar jobs it is extended to 3 months as it is not trivial to train someone for that position also for the worker to find something they like as it is more nuanced in job industry, not every developer can do any developer job unlike watiers.
