Nickel. It provides both corrosion resistance and increased ductility which makes the material more likely to bend before breaking. I like using it to weld onto busted taps to try to back them out because the weld will flex a little bit instead of just snapping off.
It depends on the grade of stainless actually. I’ve never run into “proprietary 30X stainless” but I have plenty of experience with 304, 308, 309, and 316. 309 can rust on you, but I’ve never seen 316 rust outside of ludicrously corrosive environments.
I have what’s known in the industry as “magic piss fingers”. What that means is that I am a salty, sweaty man who can rust just about anything rustable simply by touching it with my bare hand. That being said, I haven’t managed to get a single speck of rust on my welded 316 hammer in 12 years of using it.
As a machinist and welder, I would strongly prefer an actual 6000 lb lump of stainless over a cybertruck. I can actually use stainless steel to make things.
2000 feet is barely foothills. We build taller buildings than 2000 feet. When I hear “mountains” i expect a visable treeline at the very least. Mt hood, Mt Shasta, the Rockies, the Sierra Nevadas, those are mountains and ranges. You live in the hills.

The difference between us is that I am not shocked when floodzones flood, forest fires burn, and landslides slide. The only “unnatural” change in the environment is fucking people. We turn swamps into cities and then cry tragedy when they turn back into swamps. We build cities in deserts and cry that there is not enough water. Welder here. Aluminum oxide inhalation is correlated with an increased risk for alzheimers, not cancer. Hexavalent chromium is a carcinogen, and that comes from heating up stainless steels. So you are actively replacing a relatively non toxic oxide with the potential for an actually toxic carcinogenic gaseous metal, assuming your pocket knife is some sort of stainless steel (statistically very likely).
More or less the same you’d have working for Grumen or Lockheed. NASA wind tunnels were often critical tools in developing more efficient drone designs, for example. The product is the data, and you get no say in how that data is used.
